Macarons
Macarons are now highly sought after both in France and abroad.
These small, round almond-based pastries, with their colorful appearances and variety of flavors, have won great success.
They consist of two almond meringue shells (primarily French or Italian meringue) filled with a flavorful ganache or cream of your choice.
(All of my macaron shells are made using Italian meringue.)
